Wow!  I have made it through the whole week! Seven full days of Oats and Outfits!  There is a remaining form of oatmeal I have yet to eat this week, and I am so excited to make this baked oatmeal recipe.

To match my “Sunday Brunch” dress, I am making banana bread baked oatmeal.  This is my first time ever making this recipe, and I absolutely love it.  It tastes just like banana bread, and the dried cranberries give it a nice punch of tartness.  If you don’t like cranberries and coconut, feel free to use any other mix-ins you want–peanut butter, chocolate chips, walnuts, anything!

Banana Bread Baked Oatmeal

Ingredients:

  • 1/2 cup oats
  • 1/2 ripe banana, mashed
  • 1 tbs. vanilla yogurt
  • 2 tbs. water
  • 1 tbs. dried cranberries
  • 1-2 tsp. shredded coconut

Directions:

  • Combine all ingredients and pour into a single-serve ramekin.
  • Bake at 380 degrees for 15 minutes.
  • Turn oven to broil and cook for 3 minutes.
  • Let cool and eat!
