I was first introduced to Larabars on my trip out west. It was love at first bite. The gooey, crunchy mix of flavors popped in my mouth and satisfied my hunger.
However, we all know I am cheap, and Larabars are not the cheapest snack bar out there. Rather than live a sad, depraved, Larabar-less life, I did some research and learned how to make my own. The below recipe was adapted from Chocolate Covered Katie’s Oatmeal Raisin Cookie Larabar recipe. I hope you enjoy!
Nutty Oatmeal Raisin Larabar Bites
- 1/2 cup oats
- 1/2 cup raisins
- 1/6 cup walnuts
- 1/6 cup pecans
- 1/6 cup almonds
- 1 tbs. coconut
- 1/4 tsp. vanilla
- Grind oats in a food processor
- Add all other ingredients and thoroughly combine
- Form dough into small balls
- Eat! (or store between layers of wax paper in an airtight container in the refrigerator)
