I just found this post that has been sitting in my drafts bin for two years.  No joke, TWO YEARS!

…can a blog post grow old???

What was my life even like two years ago?  Spring of 2015 was my first semester as an RA.  I was working weird hours at a daycare (6:50-7:50 am, 2:30-6:00 pm).  I had never been to Texas.  I didn’t like tomatoes.

I think that it is about time that I share this recipe.

Ingredients

  • 3/4 cup milk of choice
  • 1 kiwi, peeled and sliced
  • 2 large strawberries, stems removed
  • 1/2 teaspoon vanilla extract
  • 1 cup ice
  • 1 large handful spinach

Directions

  • Combine all ingredients in a blender until smooth.
  • Drink and enjoy!

1. I am sorry that I have posted so little this month.  Although I spend all of my spare time writing, I doubt that y’all want to read a month’s worth of 5th-grade lesson plans.

2. I am sorry that it is the end of National Oatmeal Month, and I am just now sharing an oatmeal recipe.  I actually planned this recipe before Christmas, but I didn’t make it until Saturday.

3. I am sorry that there are so few pictures (and that the pictures are so bad). I made this recipe at home, but my camera was at school.  In my rush to eat the oatmeal, I didn’t realize that the white balance on my phone-camera was really off.  These are the only two photos that were somewhat salvageable.

Now that all of those issues are out of the way, let’s eat some oatmeal!

Ingredients

  • 1/3 cup oatmeal
  • 2/3 cup water
  • 1/3 cup marshmallows
  • 1 graham cracker sheet
  • 1 fun size Hershey bar

Directions

  • Combine oatmeal and water in a microwave-safe bowl.  Microwave on high 45 seconds.
  • Stir in 1/2 of the marshmallows.  Microwave an additional 30 seconds.
  • Top with remaining marshmallows, crushed graham cracker, and chocolate bar.

This seems to be the general consensus of most Americans, and  I believe that it usually works well.  As a teacher, my mom received piles of cookies, cakes, and treats from her students, and my family never complained about this multitude of desserts.

One of our favorites, chocolate covered pretzels, is the inspiration for today’s recipe.

Ingredients

  • 1 cup water
  • 1/2 teaspoon vanilla
  • 1/2 cup oatmeal
  • 1/2 banana, mashed
  • 1 tsp. cocoa powder
  • sweetener to taste
  • handful of pretzels

Directions

  • In a small saucepan, bring water and vanilla to a boil.
  • Stir in oatmeal and banana.  Return to a boil and stir in cocoa powder and sweetener.
  • Reduce heat to medium.  Cook until you are pleased with the consistency (probably around five minutes).
  • Transfer to a bowl.  Stir in pretzels.
  • Eat immediately (no one wants soggy pretzels!).
  • Enjoy!

Last Wednesday, I promised to share my recipe for Rice Krispie Treat Oatmeal.

I wish I had a great story about Rice Krispie Treats, but I don’t.  Actually, I don’t like store-bought Rice Krispie Treats because they are too thick and dry.

But I do like oatmeal, and I like Rice Krispie cereal, and I like marshmallows, so I figured that I could put them all together.

It was a good decision.

Ingredients

  • 1/2 cup oatmeal
  • 2/3 cup water
  • 1/2 banana, mashed
  • 1/4 cup Rice Krispie cereal
  • 1/3 cup marshmallows, divided

Directions

  • Combine oatmeal and water in a microwave-safe bowl.  Microwave on high for 90 seconds.
  • Stir in mashed banana and half of the marshmallows. Microwave an additional 30 seconds.
  • Stir in Rice Krispie cereal and remaining marshmallows.
  • Eat and enjoy!

Honey Nut Cereal Bars

We were all starving, but we were also all in agreement that laundry HAD to be done before we went to supper.  After a week of painting, running through the rain, and carrying dusty boxes to get everything ready for camp, we needed to clean our clothes before the laundromat closed.  That is why five college girls were sitting on the floor of an outdated laundromat in Columbus, TX.

When I reached into my bag for my journal, I saw the holy grail: five homemade Honey Nut Cereal Bars, squashed and slightly melted.  I handed one to each of my companions.  Within minutes, our hands were covered in gooey peanut butter, but our stomachs were satiated enough to fold a few more t-shirts.

Honey Nut Cereal Bars

Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1 cup cereal

Directions

  • microwave peanut butter and honey for 30 seconds
  • stir in cereal
  • pour into a small container lined with wax paper
  • freeze for at least 20 minutes
  • cut into several bars
  • eat and enjoy (or store in an airtight container)
