It’s Week 2 of National Peanut Butter Lover’s Month!

I don’t limit my peanut butter intake solely to nut butters found in a jar.  


A lot of my favorite packaged snacks have peanut butter as a main ingredient.



In fact, I would guess that 90% of my snacks are peanut-butter-based.

We were all starving, but we were also all in agreement that laundry HAD to be done before we went to supper.  After a week of painting, running through the rain, and carrying dusty boxes to get everything ready for camp, we needed to clean our clothes before the laundromat closed.  That is why five college girls were sitting on the floor of an outdated laundromat in Columbus, TX.

When I reached into my bag for my journal, I saw the holy grail: five homemade Honey Nut Cereal Bars, squashed and slightly melted.  I handed one to each of my companions.  Within minutes, our hands were covered in gooey peanut butter, but our stomachs were satiated enough to fold a few more t-shirts.

Honey Nut Cereal Bars

Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup honey
  • 1 cup cereal

Directions

  • microwave peanut butter and honey for 30 seconds
  • stir in cereal
  • pour into a small container lined with wax paper
  • freeze for at least 20 minutes
  • cut into several bars
  • eat and enjoy (or store in an airtight container)

Saturday evening after supper, I was successfully avoiding real schoolwork.

To begin, I downloaded a bunch of “educational” apps so that I could “review” them for my Educational Technology class (actually I just enjoy playing children’s games).  In between trying to create mathematical sentences and type parts of speech, I decided to scroll through my drafts folder.

Lo and behold, I have multiple recipes waiting to be shared.  I hope you enjoy National Apple Month with these apple cinnamon bites.

Ingredients

  • 1 1/4 cups flour
  • 3/4 cup oatmeal
  • 2 tbs sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 1/4 cup applesauce
  • 1/4 apple, diced
  • 2/3 cup milk
  • 1 tbs lemon juice
  • 2 tsp vanilla extract
  • extra sugar, for topping

Directions

  • Preheat oven to 450 degrees Fahernheit.
  • Combine milk and lemon juice.  Let sit while completing the next two steps.
  • In a separate bowl, mix together first seven ingredients (flour, oatmeal, sugar, baking powder, baking soda, salt, and cinnamon)
  • Stir in applesauce and diced apple.
  • Add vanilla to milk and lemon juice mixture.
  • Gradually add wet mixture to dry mixture until completely combined into a sticky dough.
  • Coat brownie pan and insert with nonstick spray.  Evenly spread dough into the pan.  Press the insert into the pan.
  • Bake in preheated oven for 12-15 minutes. Remove from oven.
  • Set oven to broil.  Sprinkle sugar over pan and broil for two minutes.
  • Let cool completely before removing from pan.
  • Eat and enjoy with a glass of milk!

Today I am taking WIAW back to how I did it week one: showing my daily spiritual and physical food for a whole week.  I was convicted last Wednesday morning when I read this statement from the Proverbs 31 Women website: “When I refuse to nourish my spirit with God’s holy Word, I suffer the ill effects of spiritual malnutrition. When I do not have a consistent healthy spiritual diet, it’s difficult to understand spiritual things and to behave in a manner worthy of my calling.”

Last week, my spiritual diet was starved, and I was struggling to show love and grace as a result.  Just like I get “hungry-angry” when I don’t have enough physical food, I can get “hangry” without spiritual food.  But a healthy diet of spiritual food can help me season my words with grace.

Spiritual Food: Ephesians 4:1-6

This passage left me wondering, “Do I live up to the life to which God called me? Am I humble, gentle, and patient?”  After quickly deciding that I am none of those things, I dedicated my day to humility, gentleness, and patience.

Jesus gives every believer spiritual gifts.  Our calling as Christians is to use our spiritual gifts (with humility, gentleness, and patience) to build unity through encouragement and accountability.

Spiritual Food:  Ephesians 4:1-16

As we use our spiritual gifts to build the body, its members will grow in maturity.  Rather than being “tossed to and fro” by false teachings, Christians will be conformed to the image of Christ.

I always keep snacks in my backpack, and it is a good thing.  I actually ate this about 30 minutes after lunch, and then I ate a bag of cashews a couple of hours later.

Spiritual Food: Ephesians 4:1-24

Using our gifts to build Christian unity stands in stark contrast to how the world lives.  Non-Christians harm themselves and others without feeling shame.  Paul reminds the Ephesians to stop living as they lived before they placed their faith in Christ.  Now that they are in Christ and maturing, their lives should reflect Christ and be characterized with goodness and holiness.

The Christian is constantly in the process of conforming their life to look more like Christ.  Because Christ forgave sinners, we should forgive those around us and “not let the sun set while we are angry.”  Additionally, we should change our language to be uplifting to those we encounter.

As we grow to become more like Christ, we should imitate his love.  Rather than talking to others with spiteful words (which is so easy for me to do–especially when I am hangry!), we should be “children of light.”

How often do I perform good acts with hopes of being seen by others?  Yes, it is good to do these things, but I should be doing them to serve Christ, not to make others see me.

Today for What I Eat Wednesday, I am showing pictures of my meals on Saturday.  I wrote the text Saturday morning, and I felt that it gave appropriate “spiritual food for thought” to pair with my comestible activity for the rest of the day.

Breakfast: The best way to finish off a jar of peanut butter is to make oatmeal in a jar!  I added grapes to make it more like pb&j.

 

Be anxious for nothing -Philippians 4:6

I seem to quote that verse on a second by second basis, and yet I am so bad at obeying it.  I tend to do the opposite and worry about everything.

Mid-morning snack: vanilla yogurt with strawberries and mandarin oranges

Right now, it is 4:30 Saturday morning, and this is what I am thinking:

  • What if I got a failing grade on the speech I gave yesterday?
  • Will I have enough time to get this assignment done?
  • What will the cafeteria serve for lunch?
  • If I swim today, will it give my mind a rest or be too taxing on my muscles?
  • I told M and K that I would take date-iversary pictures of them this afternoon, but I don’t really know what they want or what their style is.
  • Did I drink enough water yesterday?
  • Should I make my WIAW post for Saturday or Monday?
  • Should I go to the elementary school on Monday to do some prep work for student teaching?
  • I wonder if I can pick up some extra hours at work this week.
  • Should I have bought a different type of cake mix to bake for the hall meeting on Tuesday?  
  • Will I pass my licensure tests next month? 
  • Am I prepared to student teach in January?
  • What am I going to do after graduation?
  • Am I worrying too much?

I am sure the list could go on for quite a while.

Lunch in the cafeteria: banana & peanut butter sandwich (toasted in the waffle iron because the panini press was gone), mixed vegetables, and cottage cheese with cranberries

Snack while writing lesson plans: (an American classic) a hotdog and chips (I usually don’t have hotdogs in my room, but earlier this week, I really wanted a good hotdog.  Since I am picky about what counts as a “good hotdog,” I went to the store and bought a pack.)

I think my problem is that I never really make it past that first line of that verse.  I get so worried about not being anxious that I fail to realize that God does not leave me to find my own peace.

God wants me to bring my worries to Him in prayer with  thanksgiving.  He doesn’t expect me to mitigate my own fears.

Snack at Bible Study: 3 Pumpkin Cheesecake bars made by our hostess (don’t you love our patriotic plates in the middle of Autumn? 🙂 )

So right now, I am bowing my head in prayer and dedicating myself to a stress-free Saturday.  I am going to fervently surrender to God’s grace.  Then I will crawl back into bed and rest in God’s peace, eager to embrace His mercies that are new every morning.

After-Bible-Study-Snack: Greek yogurt with peanut butter (I added about 4 oz. of peanut butter to this after taking the picture…I usually eat about 4 oz. of peanut butter a night).

Did I spend Saturday completely stress- and worry-free?  No.  Nonetheless, typing that post did help me put my anxiety into perspective.  I must daily hold my life up to the light of eternity and surrender my struggles to God.

Happy Pumpkin Spice Day!

I warned y’all awhile back that I came late to the pumpkin spice party last year.  Here is a second recipe that I created far too late into the season.

Last December, I decided to take my pumpkin cheesecake dip to a Christmas party.  As I was mixing ingredients, a thought came to me – pumpkin spice latte dip!  I had to try it.

I grabbed another bowl from the cupboard and set to work creating this recipe.  After just a few taste tests, it reached perfection.

Ingredients

  • 1 package instant vanilla pudding
  • 1/2 cup cold coffee
  • 1 cup milk of choice (do not use soy)
  • 1/4 cup pumpkin puree
  • 1/8 teaspoon allspice
  • 1/2 tablespoon powdered sugar

Directions

  • Empty package of vanilla pudding into a bowl.  Stir in milk and coffee.  Whisk for two minutes.
  • Carefully fold in pumpkin, allspice, and powdered sugar.
  • Refrigerate at least fifteen minutes or until set.
  • Serve with graham crackers, or just eat with a spoon 🙂
